Coffee is one of the most widespread consumer beverage in the world. It is also one of the oldest. His name is associated with kawah Turkish word meaning "what gives flight wonder and thought" although it could also be derived from a qahwa or qaharva words, one of the Arabic names of the wine. Other versions associated his name with the region of Kaffa in Ethiopia Alta, from which probably comes from the grain. The coffee came to America by the French in the eighteenth century and was the Dutch who expanded their culture to South America. In the

nineteenth century, coffee was produced in Peru for local consumption .The Europeans who colonized the Chanchamayo Valley began to grow next to coffee, erythroxylum coca snuff, cocoa, sugar cane. In 1850 production was significant and disseminated by the Jesuits increased production is achieved since 1880, making Peru coffee exporter in 1887 sending shipments to Germany, England and Chile. The diversity of combinations of climate, soil, rainfall and sunlight is an environment conducive to the cultivation of coffee stage. Peru organic coffees are Arabica coffee with different profiles of flavor, aroma and acidity. The varieties grown are: Typical (70%), Caturra (20%) and others (10%), 90% of Peruvian organic coffee grown under shade, mainly leguminous plants. The year 2006, Peru was ranked first worldwide in the export of organic coffee, largely due to the efforts of farmers. The Peruvian organic coffee is free of pesticides, free of fertilizers and preserves the environment.
